Chicken Thighs in Wine with Rosemary
serves 4
Ingredients
- 8 ea chicken thighs
- 3 T flour
- 1/2 C shallots, chopped
- 1 T garlic, chopped
- 1 t rosemary, chopped
- 1 C red wine
- 1 C chicken broth
- 1 cn plum tomatoes, chopped
- 1 ea bay leaf
Instructions
- Season the chicken thighs, dredge in flour, then brown in oil. Remove from the pan.
- Sauté the shallots, garlic, and rosemary until tender, then add the wine, chicken stock, tomatoes and bay leaf. Bring to a boil, add the chicken, reduce heat and cook until the chicken is done.
- Plate and serve.
